Baked “Fried” Chicken

Do you like fried chicken- but not the extra calories, time to marinade and greasy mess? Try this baked fried chicken to please your hungry crowd!

    Ingredients

  • 1 Tbsp. Red Pepper
  • 4 Tbsp. Pineapple Juice
  • 4, 6 oz. Chicken, boneless and skinless
  • 1 Cup Croutons, crushed
  • 1/2 tsp. Kosher Salt
  • 3 Tbsp. Canola Oil
    Directions

  1. Heat oven to 450 degrees.
  2. In medium bowl mix pineapple juice and red pepper. Add chicken, toss to coat.
  3. In separate dish; mix croutons, salt and oil.
  4. Coat chicken in crumb mixture- one piece at a time. Transfer to baking sheet.
  5. Bake until cooked through 12-15 minutes.
  6. Serve hot!

Notes
The pineapple juice is your binder!

  2. DELICIOUS! I tried this recipe after reading the latest article from The Finicky Files and everyone ate it!! My husband, who isn’t a huge fan of chicken night after night, even commented that it had good flavor. The best part is that I had all the ingredients without running to the store and it was easy to make!! A true winner for the Mai Family!
