Banana Snack Cake

Low-calorie and filling muffins perfect for breakfast or a snack.

    Ingredients

  • 1 1/4 cups quick-cooking oats, uncooked
  • 1/2 cup raisins
  • 1/2 cup chopped dates
  • 1/4 cup whole bran cereal
  • 1/2 cup unsweetened crushed pineapple, undrained
  • 1 large over-ripe banana
  • 1/4 cup egg substitute
  • 2 tbsp low-calorie margarine, melted
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
    Directions

  1. Preheat oven to 350 degrees.
  2. Combine oats, raisins, dates and cereal in a large bowl; set aside. Mix remaining ingredients in a container of blender or food processor. Process until smooth. Add banana mixture to dry ingredients, stirring until well blended.
  3. Treat muffin pan with cooking spray Spoon batter evenly into muffin pan Bake for 30 - 35 minutes Snack cake does not rise very much during baking

Notes
I do not use a food processor or blender. I just stir and it is very lumpy. I double the recipe to make a dozen large muffins. I have also used a loaf pan.
Makes 12 mini muffins
