Banana Snack Cake
Low-calorie and filling muffins perfect for breakfast or a snack.
Ingredients
- 1 1/4 cups quick-cooking oats, uncooked
- 1/2 cup raisins
- 1/2 cup chopped dates
- 1/4 cup whole bran cereal
- 1/2 cup unsweetened crushed pineapple, undrained
- 1 large over-ripe banana
- 1/4 cup egg substitute
- 2 tbsp low-calorie margarine, melted
- 1 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
Directions
- Preheat oven to 350 degrees.
- Combine oats, raisins, dates and cereal in a large bowl; set aside. Mix remaining ingredients in a container of blender or food processor. Process until smooth. Add banana mixture to dry ingredients, stirring until well blended.
- Treat muffin pan with cooking spray Spoon batter evenly into muffin pan Bake for 30 - 35 minutes Snack cake does not rise very much during baking
Notes
I do not use a food processor or blender. I just stir and it is very lumpy. I double the recipe to make a dozen large muffins. I have also used a loaf pan.
Makes 12 mini muffins
