Carrot Cookies

Moist Cookies that have won “Most Unique” cookie awards!

    Ingredients

  • Cookie Dough:
  • 3/4 Cup Sugar
  • 3/4 Cup Canola Oil
  • 1 Egg
  • 1 Cup shredded Carrots
  • 1/2 tsp. Lemon Extract
  • 1 tsp. Vanilla
  • 2 Cups Flour
  • 1/4 tsp. Salt
  • 2 tsp. Baking Powder
  • Icing:
  • 1 medium Orange
  • 1/2 tsp. Orange Extract
  • 1 tsp. soft Butter
  • dash of Salt
  • Powdered Sugar
    Directions

  1. Cream together sugar and oil. Mix in egg. Add shredded carrots, lemon extract, vanilla, salt, and baking powder. Mix in flour slowly.
  2. Scoop out about 1 Tbsp size of dough onto cookie sheet. Bake at 350 degrees for 10-12 minutes.
  3. Icing: Squeeze the fresh juice from the orange into a medium bowl. Zest a little of the rind into bowl. Add orange extract, butter, and salt and mix. Slowly mix in enough powdered sugar until frosting is thickened (about 1/3 a bag).
  4. Ice each cookie individually after they cool.

Notes
Let frosting dry before stacking!
Makes 2 dozen
