Cowboy Taters
These mashed potatoes are full of flavor. A great side that you can make ahead of time.
Ingredients
- 1.5 lbs. Red Potatoes
- 1.5 lbs. Yellow Potatoes
- 2 oz. diced JalapeƱos
- 1/2 bag (5-7oz.) baby Carrots
- 5 cloves Garlic
- 1 10oz. package frozen white corn, thawed
- 1/4 Cup Butter
- 2 Cups Cheddar Cheese, shredded
- 6-8 pieces Bacon, crumbled
- Salt
- Pepper
Directions
- Place your potatoes, 3 cloves of garlic, and carrots in a large pot of water and bring to a boil. Cook approx 20 minutes or until the potatoes are tender. Drain water from the pot.
- Stir in everything else and mash by hand with a masher. Add salt and pepper to taste. You can adjust the heat by adding more or less jalapeƱos or buying them mild or hot.
