Eggplant Pie
An Eggplant Lovers dream!
Ingredients
- 1 long thin eggplant
- 1 large onion
- 1 pound sharp cheddar cheese
- 1 egg
- 5 slices of bread, crumbled
- 1 tablespoon butter
- salt and pepper to taste
Directions
- Peel and cube eggplant and onion.
- Boil in water for 45 minutes.
- While eggplant and onion boil, grease pie plate and break up bread crumbs.
- Drain water from eggplant and onion and return to warm heat.
- Add egg, cheese, butter, salt and pepper to saucepan.
- After butter and cheese have melted, put mixture in pie plate and cover with bread crumbs.
- Dot with butter.
- Cook uncovered at 325 degrees for 45 minutes.
