Eggplant Pie

An Eggplant Lovers dream!

    Ingredients

  • 1 long thin eggplant
  • 1 large onion
  • 1 pound sharp cheddar cheese
  • 1 egg
  • 5 slices of bread, crumbled
  • 1 tablespoon butter
  • salt and pepper to taste
    Directions

  1. Peel and cube eggplant and onion.
  2. Boil in water for 45 minutes.
  3. While eggplant and onion boil, grease pie plate and break up bread crumbs.
  4. Drain water from eggplant and onion and return to warm heat.
  5. Add egg, cheese, butter, salt and pepper to saucepan.
  6. After butter and cheese have melted, put mixture in pie plate and cover with bread crumbs.
  7. Dot with butter.
  8. Cook uncovered at 325 degrees for 45 minutes.

  1. This is such a great dish. How could it be bad- read the ingredients. I sprinkle a little hot sauce on it before I eat. YUM!
