Feta & Onion Spaghetti

Feta & Onion Spaghetti
Super easy and light. Toss in other veggies or shrimp if you like.
Ingredients
- 1 lb. Spaghetti or Linguine
- 4 Tbsp. Olive Oil
- 1 Lemon, fresh squeezed
- 1 large Red Onion, cut into thin rings
- 1 large Tomato, diced
- 1 tsp. Marjoram
- 1 clove Garlic, minced
- Salt
- Pepper
- 1 container Feta Cheese
- Pepper
Directions
- Cook the pasta to aldente. Drain, but keep 1 cup of the water you cooked the pasta in.
- Heat 2 Tbsp. of the oil in a large pan over medium heat. Add the onions and let them get soft.(around 12 minutes) Add tomatoes, garlic and salt/pepper to taste. Heat for 1 minute and add marjoram.
- Stir in pasta and remaining oil. Toss with the reserved cooking water until moist. Toss with the Feta Cheese.
- Salt and Pepper again and serve.
