Feta & Onion Spaghetti

Super easy and light. Toss in other veggies or shrimp if you like.

    Ingredients

  • 1 lb. Spaghetti or Linguine
  • 4 Tbsp. Olive Oil
  • 1 Lemon, fresh squeezed
  • 1 large Red Onion, cut into thin rings
  • 1 large Tomato, diced
  • 1 tsp. Marjoram
  • 1 clove Garlic, minced
  • Salt
  • Pepper
  • 1 container Feta Cheese
  • Pepper
    Directions

  1. Cook the pasta to aldente. Drain, but keep 1 cup of the water you cooked the pasta in.
  2. Heat 2 Tbsp. of the oil in a large pan over medium heat. Add the onions and let them get soft.(around 12 minutes) Add tomatoes, garlic and salt/pepper to taste. Heat for 1 minute and add marjoram.
  3. Stir in pasta and remaining oil. Toss with the reserved cooking water until moist. Toss with the Feta Cheese.
  4. Salt and Pepper again and serve.
