Frog Eye Salad

Try this salad for your next picnic or family gathering. The kids will LOVE it!

    Ingredients

  • 3/4 cups Sugar
  • 1/2 tsp. Salt
  • 1 Egg, beaten
  • 1 cup Acini Di Pepe Pasta (small granule-sized pasta found in the pasta section of your grocery store)
  • 1-20 oz can Chunk Pineapple
  • 1-20 oz can Crushed Pineapple
  • 1-8oz Whipped Topping
  • 1 Tbsp. Flour
  • 2/3 cup Pineapple Juice
  • 1 tsp. Lemon Juice
  • 2-11 oz cans mandarin oranges, drained
  • 1 cup miniature marshmallows
    Directions

  1. Mix sugar, flour, salt, pineapple juice and egg in saucepan and cook over medium heat; stirring constantly until thick. Add lemon juice, set aside and cool.
  2. Cook pasta and combine with mixture. Cover and chill until cool.
  3. Combine remaining ingredients and chill 1 more hour before serving.
