Jordan’s Chicken Salad
A great summer staple to send your taste buds soaring.
Ingredients
- 4 cups (1 3/4 lb) cooked chicken, cubed
- 1 cup Almond Accents sliced Almonds, found in your grocers produce section
- 2 cups Red Grapes, halved
- 1 tsp. Dried Tarragon
- 1 cup dried Cranberries
- 1 can Pineapple Tidbits, well drained
- 1/2 cup mayonnaise
- 1/4 cup Miracle Whip
- 3 Tbsp. Apple Cider Vinegar
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
Directions
- Toss all ingredients together.
- Chill overnight.
- Serve on a chilled plate over a few leaves of your favorite lettuce.
Notes
For another lunch variation, serve on a croissant. For a snack, serve with wheat thins.
