Jordan’s Chicken Salad

A great summer staple to send your taste buds soaring.

    Ingredients

  • 4 cups (1 3/4 lb) cooked chicken, cubed
  • 1 cup Almond Accents sliced Almonds, found in your grocers produce section
  • 2 cups Red Grapes, halved
  • 1 tsp. Dried Tarragon
  • 1 cup dried Cranberries
  • 1 can Pineapple Tidbits, well drained
  • 1/2 cup mayonnaise
  • 1/4 cup Miracle Whip
  • 3 Tbsp. Apple Cider Vinegar
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
    Directions

  1. Toss all ingredients together.
  2. Chill overnight.
  3. Serve on a chilled plate over a few leaves of your favorite lettuce.

Notes
For another lunch variation, serve on a croissant. For a snack, serve with wheat thins.
