King’s Ranch Chicken

Think Mexican lasagna.

    Ingredients

  • 1 can rotel
  • 1 can cream of mushroom soup
  • 1 lg can ranch style beans
  • 4-5 chicken breasts - cooked & cubed
  • 1 med onion - chopped
  • Grated cheddar cheese
  • Flour tortillas
    Directions

  1. Mix all ingredients except cheese & tortillas.
  2. In 9×13 pan, layer tortillas, 1/2 the chicken mixture & cheese.
  3. Repeat.
  4. Top with additional cheese.
  5. Bake at 350 for 3-35 min.
  6. Serve with corn chips & salsa.

Notes
This recipe freezes well. I often make one batch and put in two smaller pans, using one right away and freezing the second (uncooked) for later.
