King’s Ranch Chicken
Think Mexican lasagna.
Ingredients
- 1 can rotel
- 1 can cream of mushroom soup
- 1 lg can ranch style beans
- 4-5 chicken breasts - cooked & cubed
- 1 med onion - chopped
- Grated cheddar cheese
- Flour tortillas
Directions
- Mix all ingredients except cheese & tortillas.
- In 9×13 pan, layer tortillas, 1/2 the chicken mixture & cheese.
- Repeat.
- Top with additional cheese.
- Bake at 350 for 3-35 min.
- Serve with corn chips & salsa.
Notes
This recipe freezes well. I often make one batch and put in two smaller pans, using one right away and freezing the second (uncooked) for later.
