Make Ahead Mashed Potatoes
Yummy and so nice to have all ready to go when in a time crunch.
Ingredients
- 5 lb potatoes
- 1 egg (or 1/4 c. egg beaters)
- 1/2 t. garlic powder
- 3 T. melted butter
- 2 t. salt
- 8 oz cream cheese
- paprika
Directions
- Peel and quarter potatoes
- In 5 qt saucepan, cover potatoes with water, add 1 t. salt and boil until tender.
- Drain well.
- In large bowl,combine potatoes, cream cheese, egg, garlic powder, 1 t salt.
- Mash by hand or use electric mixer.
- Spoon potatoes in serving dishes (size depends on your family needs)
- Drizzle with melted butter.
- Sprinkle with paprika for color
- Cover and refrigerate for up to two days or freeze for later.
Notes
If you freeze, to serve thaw completely and bake for 30-40 min at 375 until golden.
Makes 6-8 cups mashed potatoes
