Make Ahead Mashed Potatoes

Yummy and so nice to have all ready to go when in a time crunch.

    Ingredients

  • 5 lb potatoes
  • 1 egg (or 1/4 c. egg beaters)
  • 1/2 t. garlic powder
  • 3 T. melted butter
  • 2 t. salt
  • 8 oz cream cheese
  • paprika
    Directions

  1. Peel and quarter potatoes
  2. In 5 qt saucepan, cover potatoes with water, add 1 t. salt and boil until tender.
  3. Drain well.
  4. In large bowl,combine potatoes, cream cheese, egg, garlic powder, 1 t salt.
  5. Mash by hand or use electric mixer.
  6. Spoon potatoes in serving dishes (size depends on your family needs)
  7. Drizzle with melted butter.
  8. Sprinkle with paprika for color
  9. Cover and refrigerate for up to two days or freeze for later.

Notes
If you freeze, to serve thaw completely and bake for 30-40 min at 375 until golden.
Makes 6-8 cups mashed potatoes
