Margie’s Chicken in a Crockpot

My mom’s chicken in a crockpot recipe made me famous — cooking “real food” can do that in college.

    Ingredients

  • 1 whole chicken
  • 1 can Cream of Mushroom Soup
  • 1 can Chicken Broth
  • Flour or Cornstarch for thickening
    Directions

  1. In the morning, place a thawed chicken in a crockpot on low heat (or frozen chicken on high heat). Cover and cook for 6-8 hours. Don’t peak!
  2. When chicken falls off bone, remove from pot with a slotted spoon. Remove bones and gristle.
  3. Cut or shred chicken.
  4. Transfer liquids from crockpot to a large saucepan. Add soup and chicken broth.
  5. Thicken using flour or cornstarch. Add chicken.
  6. Serve over cooked rice.
