Quesadillas
Quick, easy, and it won’t heat up the kitchen in those hot summer months!
Ingredients
- 2 Flour tortillas
- 1 cup shredded Mexican Blend Cheese
- Optional Add-Ins:
- Black Beans
- Diced Tomatoes
- Bacon Bits
- Diced Chicken
- Ground Beef
- Diced Avocado
- Chopped Broccoli
Directions
- Preheat a skillet on medium heat. Lightly coat with cooking spray.
- Place a tortilla in the skillet and cover with cheese.
- Layer your favorite add-ins on top of cheese.
- Once cheese begins to melt, fold tortilla in half.
- Remove from skillet and use pizza cutter to cut into three triangles.
Notes
This is one of my favorite meals to help “clean out” the fridge. It’s a wonderful use of leftover meats and fresh veggies.
