Quesadillas

Quick, easy, and it won’t heat up the kitchen in those hot summer months!

    Ingredients

  • 2 Flour tortillas
  • 1 cup shredded Mexican Blend Cheese
  • Optional Add-Ins:
  • Black Beans
  • Diced Tomatoes
  • Bacon Bits
  • Diced Chicken
  • Ground Beef
  • Diced Avocado
  • Chopped Broccoli
    Directions

  1. Preheat a skillet on medium heat. Lightly coat with cooking spray.
  2. Place a tortilla in the skillet and cover with cheese.
  3. Layer your favorite add-ins on top of cheese.
  4. Once cheese begins to melt, fold tortilla in half.
  5. Remove from skillet and use pizza cutter to cut into three triangles.

Notes
This is one of my favorite meals to help “clean out” the fridge. It’s a wonderful use of leftover meats and fresh veggies.
