Last week I made four sheets of Veggie Lasagna and it was wonderful. I added mushrooms, carrots, spinach, red peppers and zucchini. My family ate one, we put one in the freezer and sent 2 to our friends. The whole process got me to thinking about other things that could be used in lasagna. I love goat, blue and feta cheeses a ton. Is there anyway to use those in a lasagna with different meats? I think that goat cheese with ricotta would be pretty good. I would love your thoughts on this!
I think goat cheese with ricotta added to roasted veggies and maybe some panchetta would be good.
