Scalloped Potatoes and Ham

It’s still the season for comfort food! This is one of my family favorites!

    Ingredients

  • 1 lb. Ham, fully cooked and sliced and cubed.
  • 5 Med. Potatoes, sliced thinly
  • 1 can Cream of Onion soup
  • 1 cup Milk
  • 1/2 cup Onion, chopped
  • 1/4 cup Green Bell Pepper, chopped
  • 1/2 cup Cheddar Cheese, shredded
  • 1/2 cup Mozzarella Cheese, shredded
  • 3 Tbsp. Parmesan Cheese, freshly grated
  • Dash Pepper
  • Dash Salt
  • 2 Tbsp. Butter, sliced
  • 3/4 cup Shredded Cheddar Cheese
    Directions

  1. Place diced ham and thinly sliced and pealed potatoes in a 9×9 baking dish.
  2. Preheat oven to 400 degrees.
  3. In Med bowl; combine cream of onion, milk, onion, peppers, cheeses, salt and pepper. Stir well.
  4. Pour over potatoes and ham, stir together.
  5. Place sliced butter over top. Cover with foil.
  6. Bake in oven for 1 hour covered. Stirring every 30 minutes or so.
  7. Then bake an additional 30-45 minutes uncovered until potatoes are tender to fork. Stirring every 15 minutes.
  8. The last 15 minutes of cook time, sprinkle shredded cheddar cheese over top.
  9. Take out of oven and set up for 10 minutes before serving!

Notes
I use deli ham when I have extra, works great. Also, I just thought it would be tasty to crunch up corn flakes on top with the cheese towards the end! Mmmmm!
