Scalloped Potatoes and Ham
It’s still the season for comfort food! This is one of my family favorites!
Ingredients
- 1 lb. Ham, fully cooked and sliced and cubed.
- 5 Med. Potatoes, sliced thinly
- 1 can Cream of Onion soup
- 1 cup Milk
- 1/2 cup Onion, chopped
- 1/4 cup Green Bell Pepper, chopped
- 1/2 cup Cheddar Cheese, shredded
- 1/2 cup Mozzarella Cheese, shredded
- 3 Tbsp. Parmesan Cheese, freshly grated
- Dash Pepper
- Dash Salt
- 2 Tbsp. Butter, sliced
- 3/4 cup Shredded Cheddar Cheese
Directions
- Place diced ham and thinly sliced and pealed potatoes in a 9×9 baking dish.
- Preheat oven to 400 degrees.
- In Med bowl; combine cream of onion, milk, onion, peppers, cheeses, salt and pepper. Stir well.
- Pour over potatoes and ham, stir together.
- Place sliced butter over top. Cover with foil.
- Bake in oven for 1 hour covered. Stirring every 30 minutes or so.
- Then bake an additional 30-45 minutes uncovered until potatoes are tender to fork. Stirring every 15 minutes.
- The last 15 minutes of cook time, sprinkle shredded cheddar cheese over top.
- Take out of oven and set up for 10 minutes before serving!
Notes
I use deli ham when I have extra, works great. Also, I just thought it would be tasty to crunch up corn flakes on top with the cheese towards the end! Mmmmm!
