Sour Cream Chicken Enchiladas
Creamy sauce adds rich flavor.
Ingredients
- 4 Chicken Breast, cleaned
- 1 medium Onion, chopped
- 8 large Tortillas
- Cheddar Cheese, shredded
- 1 16oz. tub Sour Cream
- 1 can Cream of Chicken
- 1 small can Green Chilies, chopped
Directions
- Cook chicken; boil in hot water until cooked through. Take out of water and dice. Add chopped onion. Set aside.
- In small bowl combine sour cream, cream of chicken and green chilies.
- Roll tortillas; fill with chicken and onion mixer, sprinkle a little shredded cheese and roll. Place in 9×13 baking dish. Roll remaining seven enchiladas.
- Spread sour cream mixer over enchiladas, sprinkle with cheese.
- Bake in oven at 350 degrees for 30-45 minutes. Until cheese is melted good.
Notes
You can serve with lettuce and tomato if you like. - Recipe from my mom Cheryl! It was a regular dinner growing up.
