Sour Cream Chicken Enchiladas

Creamy sauce adds rich flavor.

    Ingredients

  • 4 Chicken Breast, cleaned
  • 1 medium Onion, chopped
  • 8 large Tortillas
  • Cheddar Cheese, shredded
  • 1 16oz. tub Sour Cream
  • 1 can Cream of Chicken
  • 1 small can Green Chilies, chopped
    Directions

  1. Cook chicken; boil in hot water until cooked through. Take out of water and dice. Add chopped onion. Set aside.
  2. In small bowl combine sour cream, cream of chicken and green chilies.
  3. Roll tortillas; fill with chicken and onion mixer, sprinkle a little shredded cheese and roll. Place in 9×13 baking dish. Roll remaining seven enchiladas.
  4. Spread sour cream mixer over enchiladas, sprinkle with cheese.
  5. Bake in oven at 350 degrees for 30-45 minutes. Until cheese is melted good.

Notes
You can serve with lettuce and tomato if you like. - Recipe from my mom Cheryl! It was a regular dinner growing up.
