Strawberry Soup
Great for a gals luncheon!
Ingredients
- 1 lb. Strawberries, rinsed, hulled
- 1/2 cup Sugar
- 2 Egg Yolks
- 1/2 cup Heavy Cream
- 3 cups Cold Water
- Lemon Juice (optional)
- Puffed Wheat Cereal
Directions
- Combine the strawberries and sugar in a blender container and process until smooth.
- Dilute the strawberry mixture with 3 cups of cold water.
- Place in a saucepan over low heat and cook gently, stirring to dissolve any remaining sugar.
- Beat the egg yolks lightly with the cream. Beat in a few tablespoons of the hot strawberry mixture.
- Return the mixture to the saucepan and cook over low heat until thickened, stirring constantly; do not boil or yolks will curdle!
- Taste the soup and add a little more sugar or a squeeze of lemon juice if desired. Serve either hot or cold, garnished with puffed wheat cereal.
Notes
You can make your own croƻtons too to garnish! Dried Angel Food Cake!
