Tomato-Basil Stuffed Turkey Breast

A twist to traditional turkey that will tantalize your tastebuds — and in a fraction of the time to cook the whole bird!

    Ingredients

  • Any size Boneless Turkey Breast - have your butcher bone your turkey breast, leaving the halves attached.
  • Fresh Basil
  • Sliced Tomatoes (or Roasted Red Peppers)
  • Mozzarella balls, halved
  • Chicken Broth or White Wine for basting
  • 2 Tbsp. Olive Oil
  • Salt
  • Pepper
    Directions

  1. Preheat oven to 450 degrees.
  2. Place turkey on work surface, skin side down. Sprinkle with salt and pepper.
  3. Place fresh basil, tomato, and mozzarella in row between breast halves. Beginning from the long side, roll the turkey breast to enclose the filling and use kitchen string to secure the turkey roll.
  4. Brush oil all over turkey. Sprinkle with salt, pepper, and chopped fresh basil. Roast at 450 for 20 minutes to brown, then reduce oven to 400 until thermometer inserted into filling registers 155 degrees F, basting turkey every 15 minutes with 1/4 cup broth or white wine and adding more broth to pan if drippings burn, about 1 hour 20 minutes for a 10-12 pound turkey breast.
  5. Remove from oven and let stand 5 minutes.

Notes
If you are unable to find a whole turkey breast, you may reduce cooking times for several turkey rolls.
Be creative with your stuffing; spinach, sausage, fennel or cranberries are a few suggestions that you can mix-n-match.
