Zucchini Bread

A moist, sweet bread.

    Ingredients

  • 3 Eggs
  • 3/4 Cups Vegetable Oil
  • 1/2 Cup Sugar
  • 3 Cups grated Zucchini
  • 2 tsp. Vanilla Extract
  • 2 Cups Flour -it’s best to sift it
  • 2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 3 tsp. Cinnamon
  • Raisins and Chopped Nuts (optional)
    Directions

  1. Mix the eggs, oil, sugar, zucchini & vanilla together in a large bowl.
  2. Add the flour, baking soda, salt and cinnamon and mix all well.
  3. Fold in raisins and/or chopped nuts and pour into a long loaf pan.
  4. Bake at 350 degrees for 40-60 minutes.
  5. Enjoy

Notes
It is best to grease and flour your loaf pan before mixing ingredients.
