Green Eggs and Ham

These are so easy and they taste great. I cannot wait to make them for a crowd at my house.

    Ingredients

  • Canadian Bacon or Prosciutto
  • 1 box Frozen Creamed Spinach, thawed
  • Eggs
  • Salt
  • Pepper
  • Cooking spray
    Directions

  1. Take a medium to large muffin tin and spray with cooking spray.
  2. Line the tin with 1 large piece of bacon or prosciutto.
  3. Scoop one tablespoon of creamed spinach on top of meat.
  4. Crack an egg and put it on top. Season with salt and pepper.
  5. Bake for approx. 15 minutes at 350. Cooking time will depend on how you like your eggs.
  6. They pop out like a little unit and the bacon is nice and crisp.

Notes
I whipped up my husbands eggs in a bowl and poured them in because he likes them scrambled.
You can make a couple of these quickly or fill the tray in no time.

  2. I made these for a couple of visitors who didn’t want the spinach in them. I put cheddar in place of the spinach and they were awesome.
