Green Eggs and Ham
These are so easy and they taste great. I cannot wait to make them for a crowd at my house.
Ingredients
- Canadian Bacon or Prosciutto
- 1 box Frozen Creamed Spinach, thawed
- Eggs
- Salt
- Pepper
- Cooking spray
Directions
- Take a medium to large muffin tin and spray with cooking spray.
- Line the tin with 1 large piece of bacon or prosciutto.
- Scoop one tablespoon of creamed spinach on top of meat.
- Crack an egg and put it on top. Season with salt and pepper.
- Bake for approx. 15 minutes at 350. Cooking time will depend on how you like your eggs.
- They pop out like a little unit and the bacon is nice and crisp.
Notes
I whipped up my husbands eggs in a bowl and poured them in because he likes them scrambled.
You can make a couple of these quickly or fill the tray in no time.
