Broccoli Slaw

    Ingredients

  • 1/3 c lemon juice
  • 1 Tbsp Dijon mustard
  • 1 Tbsp + 1 tsp sugar
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 6 Tbsp olive oil
  • 1 bunch broccoli
  • 2 carrots, ribboned with a veg. peeler
  • 1 red bell pepper, cut into strips
  • 1 red apple, unpeeled, cut into thin wedges.
    Directions

  1. Separate broccoli florets and stalk.
  2. Cut stalk into matchsticks. (For the broccoli stalk and carrot part, I used bagged broccoli slaw from the grocery
    store.)
  3. Blanch florets for 1 min.
  4. Mix all the ingredients together.
  5. Let sit at least 30 min before serving.
