
Yes, I’ve written about this before, but I cannot emphasize my love of breakfast foods enough. So, why not have breakfast food for supper (hence the name “brupper) more often?? Because, like many of you, I get into cooking ruts. I tend to grocery shop for the same items, which make the same meals. I like to cook the recipes I have in my head to save time and they tend to be very traditional evening meals: meat/chicken, starch, veggies, & sometimes bread if I’m really getting creative. Anyway, there are many, many reasons to have breakfast food for dinner and I’ll just share a few of my favorites.
#3 I don’t have to fight anyone to eat — hubby and kids LOVE it! No leftovers (OK - that’s technically two reasons in one).
#2 It’s very economical. Seriously, it’s so cheap, you could even have them for breakfast, lunch, AND dinner.
And the #1 reason….IT’S DIFFERENT!!
So, share in my celebration for the breakfast foods that often get overlooked in the morning rush to get the kids out the door to school. Praise the food that takes a backseat to the “energy-in-a-mug” we often choose. Delight your family by substituting your ordinary chicken or meat entree with a stack of fluffy pancakes, a breakfast casserole, bagel sandwiches (”Egg McMargie’s as my mom used to call them) or a cheesy omelet breakfast. You and your family will soon add “Brupper” to your recipe rut.
