Cheese Omelet Breakfast
Once you try this recipe, you’ll never go back to just a plain omelet on the stovetop. It’s crispy bottom and top are a crowd pleaser.
Ingredients
- 6 oz spicy Italian sausage, casings removed
- 3 tsp. olive oil, divided
- 1 small onion, diced
- 1 small potato, diced
- 1/2 red bell pepper, diced
- 6 large eggs
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 2 oz sharp cheddar cheese, shredded
Directions
- Crumble sausage into a large broiler-proof skillet over medium-high heat and saute until cooked through, about 6 minutes.
- Transfer sausage to a paper towel to drain & set aside.
- Add 1 tsp. olive oil to skillet and stir in onion, potato and bell pepper. Cover & cook vegetables, stirring occasionally, until tender, about 12 minutes.
- Cool slightly.
- Preheat broiler.
- Whisk eggs, salt and pepper in a large bowl until blended.
- Stir vegetable mixture into eggs and wipe out skillet.
- Warm remaining 2 tsp. olive oil in the skillet over medium-low heat.
- Pour egg, vegetable mixture & sausage into skillet, sprinkling cheese on top.
- Cover skillet and cook until eggs are set on the bottom and the cheese melts, about 10 minutes.
- Take lid off skillet and place under the broiler until eggs are set on top and the cheese is lightly browned and bubbling, about 2 minutes.
- Cut into wedges and serve.
