Cheese Omelet Breakfast

Once you try this recipe, you’ll never go back to just a plain omelet on the stovetop. It’s crispy bottom and top are a crowd pleaser.

    Ingredients
  • 6 oz spicy Italian sausage, casings removed
  • 3 tsp. olive oil, divided
  • 1 small onion, diced
  • 1 small potato, diced
  • 1/2 red bell pepper, diced
  • 6 large eggs
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 2 oz sharp cheddar cheese, shredded
    Directions
  1. Crumble sausage into a large broiler-proof skillet over medium-high heat and saute until cooked through, about 6 minutes.
  2. Transfer sausage to a paper towel to drain & set aside.
  3. Add 1 tsp. olive oil to skillet and stir in onion, potato and bell pepper. Cover & cook vegetables, stirring occasionally, until tender, about 12 minutes.
  4. Cool slightly.
  5. Preheat broiler.
  6. Whisk eggs, salt and pepper in a large bowl until blended.
  7. Stir vegetable mixture into eggs and wipe out skillet.
  8. Warm remaining 2 tsp. olive oil in the skillet over medium-low heat.
  9. Pour egg, vegetable mixture & sausage into skillet, sprinkling cheese on top.
  10. Cover skillet and cook until eggs are set on the bottom and the cheese melts, about 10 minutes.
  11. Take lid off skillet and place under the broiler until eggs are set on top and the cheese is lightly browned and bubbling, about 2 minutes.
  12. Cut into wedges and serve.

RECOMMENDED: Cast-iron skillet
