Linguine with Broccoli & Red Pepper Flakes
Light and very tasty vegetarian dish.
Ingredients
- 1 head fresh broccoli, cut in florets
- 2 cups carrots, cut in shoestrings
- 1 cup red peppers, sliced
- 1/2 lb. linguini, dry
- 5 Tbsp olive oil
- 2 medium garlic cloves, minced
- 1/8 tsp. red pepper flakes
- 2 Tbsp lemon juice
- 1/3 cups grated parmesan cheese
- 1/4 cups sunflower seeds, toasted
Directions
- Blanch broccoli and carrots in boiling salted water until crisp-tender, about 3 minutes.
- Drain and refresh under cold water, Drain again.
- Cook pasta.
- Heat oil in skillet on medium-low.
- Add garlic, saute about 1 minute.
- Add red pepper flakes, about 30 seconds.
- Add broccoli, carrots and red peppers, about 2 minutes.
- Add pasta. Toss.
- Add lemon juice. Toss.
- Mix in cheese and season with salt and pepper to taste.
Notes
Top with sesame seeds and fresh parmesan before serving.
