Sea Bass with Ginger Veggies

That’s Good Bass!

Cooked in foil packets, this is easy, delicious and good for you!

    Ingredients

  • 1 small Zucchini, cut into julienne strips
  • 1 small Yellow Summer Squash, julienned
  • 1 small Carrot, Julienned
  • 1 Tbsp. Gingerroot, grated
  • 1 clove Garlic, minced
  • 4 fillets Sea Bass, approx. 6 oz
  • 4 tsp. Lemon Juice
    Directions

  1. Preheat grill to medium.
  2. Tear 4 large pieces of heavy foil. Fold each in half to make a double thick square. Lightly coat each square of foil with cooking spray
  3. Toss together zucchini, summer squash, carrot, gingerroot, and garlic. Spoon vegetable mixture evenly on to foil squares.
  4. Rinse fish and pat dry. Place fillets on top of veggie mixture. Sprinkle with lemon juice. Season with salt and pepper. Bring up opposite edges of foil and seal with a double fold. Fold remaining edges to enclose food.
  5. Grill packets, covered, for 15-20 minutes or until fish flakes. Open carefully and enjoy!

Notes
Rice would make a great side. Serves 4.

  1. You could make this w/ any white fish.

    If you make it exactly it has 184 calories, 4g carbs, 32g protein, 4g fat, and 1g fiber.
