Fried Ripe Plantains
- 4 very ripe plantains (will look like rotten bananas) or as many as you desire.
- vegetable oil
- Peel and cut plantains into 3/4″ diagonal pieces.
- Cover bottom of skillet with approximately 1/4 cup vegetable oil.
- Brown plantains over medium high heat for 2 minutes on each side or until light brown.
- Place on paper towel to drain excess oil.
The riper the plantain is, the sweeter the taste will be.
Do not over cook, the plantains will taste scorched.
