This is a take on the cabbage rolls (Galushkies or “Piggies”) which we made back home in Western Kansas. Instead of rolling them in individual cabbage leaves, this is a quicker way to enjoy the same flavor in a one-dish method. Galushkies (pronounced “Ga-loosh-gies” are a Volga German dish enjoyed year round. Some people made them with the tomato topping while others opted for sour kraut. Either way is delicious. This is an old family recipe and goes back many, many years.
