Linguine with Broccoli & Red Pepper Flakes

Light and very tasty vegetarian dish.

    Ingredients

  • 1 head fresh broccoli, cut in florets
  • 2 cups carrots, cut in shoestrings
  • 1 cup red peppers, sliced
  • 1/2 lb. linguini, dry
  • 5 Tbsp olive oil
  • 2 medium garlic cloves, minced
  • 1/8 tsp. red pepper flakes
  • 2 Tbsp lemon juice
  • 1/3 cups grated parmesan cheese
  • 1/4 cups sunflower seeds, toasted
    Directions

  1. Blanch broccoli and carrots in boiling salted water until crisp-tender, about 3 minutes.
  2. Drain and refresh under cold water, Drain again.
  3. Cook pasta.
  4. Heat oil in skillet on medium-low.
  5. Add garlic, saute about 1 minute.
  6. Add red pepper flakes, about 30 seconds.
  7. Add broccoli, carrots and red peppers, about 2 minutes.
  8. Add pasta. Toss.
  9. Add lemon juice. Toss.
  10. Mix in cheese and season with salt and pepper to taste.

Notes
Top with sesame seeds and fresh parmesan before serving.
