Fresh Falafel: A Healthy and Delicious Recipe
I’m currently enjoying a vacation in France. Vacation means more time for things I usually don’t get around to. For me, that includes a lot of reading, but also experimenting in the kitchen, which is pure relaxation.
A while ago, I came across a recipe for fresh falafel, made without wheat flour and not fried. Of course, you can buy ready-made falafel, but homemade is not only healthier, it also tastes better. Plus, you can perfectly adjust the seasoning to your own preference. Falafel is a favorite among vegetarians, but even those who love Middle Eastern cuisine will appreciate these delicious “chickpea patties.”
In addition to falafel, Greek olive oil is essential to take the flavor to the next level. A drizzle of extra virgin olive oil not only enhances the taste but also makes the falafel softer and more moist.
Ingredients
- 250g chickpeas, canned or cooked
- A large bunch of fresh parsley
- 1 grated carrot
- 1 finely chopped onion
- 6 cloves of garlic, minced
- 4 tablespoons chickpea flour (or another unrefined wheat-free flour)
- 1 teaspoon paprika powder
- ½ teaspoon caraway seed (ground)
- Sea salt and pepper to taste
- 1 tablespoon tahini (optional, for extra creaminess)
- Olive oil or coconut oil for frying
Preparation
- Prepare the chickpeas:
- If using canned chickpeas, rinse them well until the water runs clear.
- If using dried chickpeas, soak them overnight and cook according to the package instructions.
- Make the falafel mixture:
- Place the chickpeas in a food processor and blend until smooth.
- Add a drizzle of Greek olive oil for a creamier texture.
- Transfer the chickpea paste to a large bowl, add all other ingredients, and mix well.
- Form the falafel:
- Take a tablespoon of the mixture and shape it into small falafel balls or patties with your hands.
- Cooking:
- Heat olive oil or coconut oil in a pan and fry the falafels for about 2 minutes on each side until golden brown.
- You can prepare them in advance and simply reheat them before serving.
- Serving:
- Falafel is delicious with a salad or in a pita bread with hummus and tahini.
- Serve with a Mediterranean-style vegetable bake of zucchini, eggplant, tomato, and mozzarella for a complete meal.
