Ingredients

  • 1200 gr beef (such as beef shank or beef shin)
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground black pepper (optional)
  • 2 red bell peppers, chopped
  • 1 cup chopped fresh tomatoes or canned crushed tomatoes
  • 1 tablespoon all-purpose flour or cornstarch
  • Salt to taste
  • 1 cup yogurt

Instructions

  1. Cut the beef into bite-sized pieces.
  2. Heat the olive oil in a large, shallow Dutch oven over medium heat.
  3. Add the chopped onion and cook, stirring constantly, until it becomes translucent and slightly caramelized, about 6-7 minutes.
  4. Add the beef to the pot and cook, stirring occasionally, until it releases its juices and starts to brown, about 10 minutes.
  5. Add the chopped bell peppers, paprika, and black pepper (if using) to the pot.
  6. Stir in the chopped tomatoes and add salt to taste.
  7. Cover the pot with a lid and simmer over low heat for 1 hour and 15 minutes, or until the beef is tender.
  8. In a small bowl, mix the flour or cornstarch with 2 tablespoons of water until smooth.

  10. Remove some of the cooking liquid from the pot and add it to the bowl, stirring until smooth.
