Easy Pork with Fruits in the Oven
Introduction

Ingredients
- 2 kg pork shoulder or butt, cut into portions
- 2 tbsp olive oil
- Salt
- Freshly ground pepper
- 2 onions, cut into thick slices
- 1 tsp garlic
- 1 ripe tomato
- 1 cup red wine
- 2 apples, peeled and cut into wedges
- 1/4 cup dried fruits (such as cranberries or raisins)
- 2 tbsp butter
Instructions
- Prepare the bouquet garni by tying all the ingredients in a tulipán and setting it aside.
- Heat the olive oil in a pan and brown the pork portions on all sides. Transfer the browned pork to a baking dish.
- Sauté the onions and garlic in the same pan for 3-4 minutes, then add them to the baking dish.
- Deglaze the pan with the red wine, scraping the bottom to release any browned bits. Add the wine mixture to the baking dish.
- Score the tomato in a cross pattern and add it to the dish. Complete the dish with the bouquet garni, salt, and pepper.
- Cover the baking dish and bake in a preheated oven at 180°C-200°C for approximately 1 hour and 45 minutes, or until the meat is tender.
- Clean and cut the apples into wedges. Heat the butter in a pan and brown the apples for 4-5 minutes. Add the apples and dried fruits to the baking dish.
- Continue baking for an additional 30 minutes, or until the apples are tender and the dried fruits are plump.
