Introduction

Ingredients

  • 2 kg pork shoulder or butt, cut into portions
  • 2 tbsp olive oil
  • Salt
  • Freshly ground pepper
  • 2 onions, cut into thick slices
  • 1 tsp garlic
  • 1 ripe tomato
  • 1 cup red wine
  • 2 apples, peeled and cut into wedges
  • 1/4 cup dried fruits (such as cranberries or raisins)
  • 2 tbsp butter

Instructions

  1. Prepare the bouquet garni by tying all the ingredients in a tulipán and setting it aside.
  2. Heat the olive oil in a pan and brown the pork portions on all sides. Transfer the browned pork to a baking dish.
  3. Sauté the onions and garlic in the same pan for 3-4 minutes, then add them to the baking dish.
  4. Deglaze the pan with the red wine, scraping the bottom to release any browned bits. Add the wine mixture to the baking dish.
  5. Score the tomato in a cross pattern and add it to the dish. Complete the dish with the bouquet garni, salt, and pepper.
  6. Cover the baking dish and bake in a preheated oven at 180°C-200°C for approximately 1 hour and 45 minutes, or until the meat is tender.
  7. Clean and cut the apples into wedges. Heat the butter in a pan and brown the apples for 4-5 minutes. Add the apples and dried fruits to the baking dish.
  8. Continue baking for an additional 30 minutes, or until the apples are tender and the dried fruits are plump.
