Pan-Seared Pork with Peppers and Mustard

Ingredients
- 1 kg pork (neck or shoulder), cut into bite-sized pieces
- 2 bell peppers, cut into strips
- 1/4 cup tsipouro (or white wine)
- 1/4 cup olive oil
- 1 tsp paprika
- 1 tsp Dijon mustard
- 1/4 cup dry white wine
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Cut the bell peppers into strips using a sharp knife.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook for 5-6 minutes, until browned on all sides.
- Add the sliced peppers to the skillet and continue cooking for an additional 3-4 minutes.
- Deglaze the skillet with tsipouro (or white wine).
- Sprinkle the paprika over the pork and peppers, then season with salt and pepper.
- Mix the Dijon mustard with 1 cup of water and pour over the pork and peppers.
- Once the pork has absorbed all the liquid, add the dry white wine and dried oregano. Simmer for an additional 6-7 minutes, until the pork is cooked through and the sauce has thickened.
