Ingredients

  • 1 kg pork (neck or shoulder), cut into bite-sized pieces
  • 2 bell peppers, cut into strips
  • 1/4 cup tsipouro (or white wine)
  • 1/4 cup olive oil
  • 1 tsp paprika
  • 1 tsp Dijon mustard
  • 1/4 cup dry white wine
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Cut the bell peppers into strips using a sharp knife.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook for 5-6 minutes, until browned on all sides.
  3. Add the sliced peppers to the skillet and continue cooking for an additional 3-4 minutes.
  4. Deglaze the skillet with tsipouro (or white wine).
  5. Sprinkle the paprika over the pork and peppers, then season with salt and pepper.
  6. Mix the Dijon mustard with 1 cup of water and pour over the pork and peppers.
  7. Once the pork has absorbed all the liquid, add the dry white wine and dried oregano. Simmer for an additional 6-7 minutes, until the pork is cooked through and the sauce has thickened.
