Walnut Biscuits Recipe
Introduction
Delicious walnut biscuits, also known as “παξιμαδάκια με καρύδια” in Greek, are a perfect treat for any time of the day. These crunchy and flavorful biscuits are made with ground walnuts, olive oil, sugar, eggs, and flour.
Ingredients
- 220g light olive oil or sunflower oil
- 220g sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 200g all-purpose flour
- 120g ground walnuts
Instructions
- Sift the flour and baking powder into a bowl.
- In a mixing bowl, combine the olive oil and sugar. Beat them at high speed until the sugar is dissolved.
- Add the eggs one by one, allowing the mixture to absorb them.
- Add the vanilla extract.
- Reduce the mixer speed and gradually add the sifted flour.
- Finally, add the ground walnuts.
- Grease a shallow baking pan and pour in the mixture.
- Bake in a preheated oven at 170°C for 25 minutes, or until golden brown.
- Remove from the oven and cut into strips or small biscuits.
- Place the biscuits on a baking sheet with the cut side down.
- Bake in a moderate oven until they are dry and crispy, about 15-20 minutes.
