Ingredients

  • 220g light olive oil or sunflower oil
  • 220g sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 200g all-purpose flour
  • 120g ground walnuts

Instructions

  1. Sift the flour and baking powder into a bowl.
  2. In a mixing bowl, combine the olive oil and sugar. Beat them at high speed until the sugar is dissolved.
  3. Add the eggs one by one, allowing the mixture to absorb them.
  4. Add the vanilla extract.
  5. Reduce the mixer speed and gradually add the sifted flour.
  6. Finally, add the ground walnuts.
  7. Grease a shallow baking pan and pour in the mixture.
  8. Bake in a preheated oven at 170°C for 25 minutes, or until golden brown.
  9. Remove from the oven and cut into strips or small biscuits.
  10. Place the biscuits on a baking sheet with the cut side down.
  11. Bake in a moderate oven until they are dry and crispy, about 15-20 minutes.
