Introduction

Ingredients

  • A little flour for dusting
  • 4 tablespoons olive oil
  • 2 pounds beef ossobuco, cut into 4 pieces (400g each)
  • 1 onion
  • 1 stalk celery
  • 1 carrot
  • 1 piece of leek
  • 2 pomodori
  • 1 cup red wine
  • 2 cups beef broth
  • 1 bay leaf
  • 1 sprig of fresh thyme
  • Salt and freshly ground black pepper

Instructions

  1. Season the beef with salt and pepper, then dust with flour.
  2. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the beef until browned on all sides, then set aside.
  3. Chop the onion, celery, carrot, and leek, and add them to the pot. Cook until the vegetables are softened, then add the pomodori, thyme, bay leaf, and beef broth.
  4. Return the beef to the pot, cover with a lid, and transfer to the oven. Braise at 180°C for about 2 hours, or until the meat is tender.
  5. Remove the pot from the oven and place it over high heat on the stovetop. Bring the sauce to a boil and cook until it thickens.
  6. Season the sauce with salt and pepper to taste. If desired, strain the sauce through a fine-mesh sieve.
