Braised Beef Ossobuco
Introduction

Ingredients
- A little flour for dusting
- 4 tablespoons olive oil
- 2 pounds beef ossobuco, cut into 4 pieces (400g each)
- 1 onion
- 1 stalk celery
- 1 carrot
- 1 piece of leek
- 2 pomodori
- 1 cup red wine
- 2 cups beef broth
- 1 bay leaf
- 1 sprig of fresh thyme
- Salt and freshly ground black pepper
Instructions
- Season the beef with salt and pepper, then dust with flour.
- Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the beef until browned on all sides, then set aside.
- Chop the onion, celery, carrot, and leek, and add them to the pot. Cook until the vegetables are softened, then add the pomodori, thyme, bay leaf, and beef broth.
- Return the beef to the pot, cover with a lid, and transfer to the oven. Braise at 180°C for about 2 hours, or until the meat is tender.
- Remove the pot from the oven and place it over high heat on the stovetop. Bring the sauce to a boil and cook until it thickens.
- Season the sauce with salt and pepper to taste. If desired, strain the sauce through a fine-mesh sieve.
