Ingredients

For the cream:

  • 1250 grams of milk
  • 150 grams of sugar
  • 1 tsp of vanilla powder (or vanilla extract)
  • 1 cinnamon stick
  • A pinch of salt
  • Zest of 1 small lemon
  • 50 grams of fine semolina
  • 50 grams of all-purpose flour
  • 3 large eggs
  • 50 grams of butter

For the crust:

  • 2 Tbsp of milk
  • 1 large egg
  • 50 grams of sugar
  • 30 grams of butter

  • Cinnamon and sugar

Instructions

  1. Ensure all ingredients are at room temperature.
  2. Butter and flour a 30 cm diameter round baking pan or a 23 x 35 cm rectangular pan.
  3. In a pot with a heavy base, heat 1 liter of milk over medium heat. Add sugar, cinnamon stick, lemon zest, vanilla, and salt.
  4. In a separate bowl, whisk eggs and add the remaining milk, flour, and semolina. Combine well.
  5. Gradually add the hot milk mixture to the egg mixture, stirring continuously.
  6. Pour the egg mixture into the pot and stir until the cream thickens, removing from heat at the first sign of boiling.
  7. Stir in butter until melted.
  8. Pour the cream into the prepared pan and even out.
  9. For the crust, whisk together the egg, milk, and sugar. Brush over the cream.
  10. Cut the butter into small pieces and distribute over the top.
  11. Bake in a preheated convection oven at 180 degrees Celsius for about 45 minutes or until the pie rises, firms, and turns golden brown.
  12. Optionally, sprinkle with cinnamon and sugar while hot.
  13. Let cool before cutting and serving.
