Introduction

Moschari Giavourdou is a hearty and flavorful Greek beef stew made with tender chunks of beef, onions, garlic, and a blend of aromatic spices. This traditional recipe is a staple of Greek cuisine and is often served with a side of creamy yogurt and crusty bread.

Ingredients

  • 800 gr beef (chuck or round), cut into small pieces
  • 2 tablespoons all-purpose flour
  • 1/4 cup olive oil
  • 1 medium onion, finely chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon paprika
  • 4 finely chopped tomatoes or 400 gr canned crushed tomatoes
  • 1/2 cup red wine
  • 1 bunch of fresh parsley or dill, chopped
  • 250 gr strained yogurt
  • 3 tablespoons garlic oil
  • Salt and freshly ground black pepper

Instructions

  1. Cut the beef into small pieces and season with salt and pepper.
  2. Dust the beef with flour, shaking off any excess.
  3. Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
  4. Add the chopped onion and cook until softened, about 4-5 minutes.
  5. Add the paprika, cinnamon, and allspice, and stir to combine.
  6. Add the red wine and bring to a boil, scraping up any browned bits from the bottom of the pan.
  7. Add the chopped tomatoes and stir to combine.
  8. Reduce the heat to low, cover the pot, and simmer for about 1 hour and 15 minutes, or until the beef is tender.
  9. Stir in the garlic oil and season with salt and pepper to taste.
