Moschari Giavourdou - A Traditional Greek Beef Stew
Introduction
Moschari Giavourdou is a hearty and flavorful Greek beef stew made with tender chunks of beef, onions, garlic, and a blend of aromatic spices. This traditional recipe is a staple of Greek cuisine and is often served with a side of creamy yogurt and crusty bread.
Ingredients
- 800 gr beef (chuck or round), cut into small pieces
- 2 tablespoons all-purpose flour
- 1/4 cup olive oil
- 1 medium onion, finely chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon paprika
- 4 finely chopped tomatoes or 400 gr canned crushed tomatoes
- 1/2 cup red wine
- 1 bunch of fresh parsley or dill, chopped
- 250 gr strained yogurt
- 3 tablespoons garlic oil
- Salt and freshly ground black pepper
Instructions
- Cut the beef into small pieces and season with salt and pepper.
- Dust the beef with flour, shaking off any excess.
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
- Add the chopped onion and cook until softened, about 4-5 minutes.
- Add the paprika, cinnamon, and allspice, and stir to combine.
- Add the red wine and bring to a boil, scraping up any browned bits from the bottom of the pan.
- Add the chopped tomatoes and stir to combine.
- Reduce the heat to low, cover the pot, and simmer for about 1 hour and 15 minutes, or until the beef is tender.
- Stir in the garlic oil and season with salt and pepper to taste.
