Introduction

Ingredients

For the cake:

  • 180g soft butter
  • 180g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tsp balsamic glaze with honey
  • 180g self-raising flour
  • 1 tsp baking powder
  • 4 tbsp balsamic cream

For the filling:

  • 500g fresh strawberries
  • 2 tbsp balsamic glaze with honey
  • 3 tbsp sugar
  • A few leaves of fresh mint or lemon balm, chopped
  • 3 tbsp strawberry jam
  • 200g mascarpone or other cream cheese
  • 100g heavy cream
  • Powdered sugar
  • Strawberries and mint leaves for serving

Instructions

  1. Preheat the oven to 170°C (or 160°C for fan-assisted ovens).
  2. Sift the flour with the baking powder, then grease and line two 22cm disposable cake pans.
  3. Beat the butter and sugar until creamy. Add the eggs one by one, followed by the balsamic glaze and vanilla extract. Finally, gently fold in the flour.
  4. Divide the mixture evenly between the prepared pans. Create stripes on the surface of each cake using the balsamic cream.
  5. Bake for approximately 25 minutes, or until the cakes are lightly browned and a knife inserted into the center comes out clean.
  6. Allow the cakes to stand for 10 minutes before transferring them to a wire rack to cool completely.
  7. While the cake is baking, wash and clean the strawberries. Set aside 5-6 strawberries for garnish and slice the rest into quarters or halves, depending on their size.
  8. Place the sliced strawberries in a pan with the sugar and balsamic glaze. Cook over low heat for 5-6 minutes, or until the strawberries have softened slightly but retain their shape. Strain the mixture and let it cool.
  9. Return the syrup to the heat and cook until it thickens like honey. Remove from heat and pour over the cooled strawberries.
  10. Mix the heavy cream into the mascarpone cheese until the cheese is smooth and creamy.
  11. Place one of the cooled cakes on a serving plate, spread with strawberry jam, and then with the mascarpone mixture. Top with the strawberry and syrup mixture.
  12. Cover the cake with the second cake, dust with powdered sugar, and garnish with the reserved strawberries.
