Traditional Kataphiotiko from Kozani
Introduction
Kataphiotiko is a traditional Greek dish originating from Kozani, made with lamb, vegetables, and a blend of spices. This hearty recipe is perfect for special occasions and celebrations.
Ingredients
- 2 kg lamb, cut into portions
- 2 whole heads of garlic
- 4 dried red onions
- 4 green peppers
- 4 red peppers
- 4 large, ripe tomatoes
- 2 large potatoes
- 1 cup olive oil
- 1 bunch of fresh parsley
- 1 tsp red pepper flakes
- Salt and freshly ground pepper
Instructions
- Place the lamb in a large pot, cover it with water, and boil for 30 minutes.
- Meanwhile, slice the onions and peppers into rings.
- Clean and slice the potatoes into thin layers, similar to those used in moussaka.
- Arrange the potatoes in a baking dish or large Dutch oven.
- Add a layer of lamb, followed by a layer of onions, then peppers, and finally a layer of sliced tomatoes.
- Add the garlic, sprinkle with parsley and red pepper flakes, and season with salt and pepper.
- Pour 1 cup of the lamb’s broth over the dish and drizzle with olive oil.
- Cover the dish with a lid or aluminum foil and bake in a preheated oven at 250°C for 30 minutes.
- Reduce the heat to 160°C and simmer for 3 hours.
