Introduction

Kataphiotiko is a traditional Greek dish originating from Kozani, made with lamb, vegetables, and a blend of spices. This hearty recipe is perfect for special occasions and celebrations.

Ingredients

  • 2 kg lamb, cut into portions
  • 2 whole heads of garlic
  • 4 dried red onions
  • 4 green peppers
  • 4 red peppers
  • 4 large, ripe tomatoes
  • 2 large potatoes
  • 1 cup olive oil
  • 1 bunch of fresh parsley
  • 1 tsp red pepper flakes
  • Salt and freshly ground pepper

Instructions

  1. Place the lamb in a large pot, cover it with water, and boil for 30 minutes.
  2. Meanwhile, slice the onions and peppers into rings.
  3. Clean and slice the potatoes into thin layers, similar to those used in moussaka.
  4. Arrange the potatoes in a baking dish or large Dutch oven.
  5. Add a layer of lamb, followed by a layer of onions, then peppers, and finally a layer of sliced tomatoes.
  6. Add the garlic, sprinkle with parsley and red pepper flakes, and season with salt and pepper.
  7. Pour 1 cup of the lamb’s broth over the dish and drizzle with olive oil.
  8. Cover the dish with a lid or aluminum foil and bake in a preheated oven at 250°C for 30 minutes.
  9. Reduce the heat to 160°C and simmer for 3 hours.
