Beef Stew with Mastic
Introduction

Ingredients
- 750g beef, cut into large pieces
- 500g onions, cleaned and chopped
- 6-8 cloves of garlic
- 4 tomatoes
- 2 tsp thyme

- 1 tsp orange zest
- 2 bay leaves
- 2-3 mastic tears, pounded with a little salt
- 2 tbsp vinegar
- 1 small glass of olive oil
- Salt to taste
Instructions
- Chop the vegetables using a knife.
- Boil the beef with thyme and a little water in a heavy pot for 30 minutes, then add salt.
- Continue boiling for another hour, making sure there is always some liquid.
- Heat the oil in a pan and sauté the onions and then the garlic.
- Add the aromatics and spices, and extinguish with tomato and vinegar.
- Pour the sauce over the meat and simmer for 30 minutes, until the dish is left with its oil.
