Ingredients

  • 750g beef, cut into large pieces
  • 500g onions, cleaned and chopped
  • 6-8 cloves of garlic
  • 4 tomatoes
  • 2 tsp thyme
  • 10 peppercorns or allspice

  • 1 tsp paprika
  • 1 tsp orange zest
  • 2 bay leaves
  • 2-3 mastic tears, pounded with a little salt
  • 2 tbsp vinegar
  • 1 small glass of olive oil
  • Salt to taste

Instructions

  1. Chop the vegetables using a knife.
  2. Boil the beef with thyme and a little water in a heavy pot for 30 minutes, then add salt.
  3. Continue boiling for another hour, making sure there is always some liquid.
  4. Heat the oil in a pan and sauté the onions and then the garlic.
  5. Add the aromatics and spices, and extinguish with tomato and vinegar.
  6. Pour the sauce over the meat and simmer for 30 minutes, until the dish is left with its oil.
