Lemona Chicken with Potatoes in the Oven
Introduction
Today, we’re going to make a delicious Greek dish called “Κατσικάκι λεμονάτο με πατάτες στη γάστρα”, which translates to Lemona Chicken with Potatoes in the Oven. This mouth-watering recipe is perfect for special occasions or a cozy night in with the family.
Ingredients
- 1½ kg chicken (leg, thigh, or shoulder)
- 10 large potatoes
- 3/4 cup olive oil
- 2 juicy lemons (juice and zest)
- 1 tsp dried oregano
- 2 sprigs of thyme
- 1-2 sprigs of rosemary
- 2 tbsp mustard
- 2 cloves of garlic with skin
- 1 cup water
- Salt and freshly ground pepper
Instructions
- Preheat the oven to 200°C (400°F) with the resistances on.
- You can either use a whole piece of chicken or cut it into portions.
- In a bowl, mix together olive oil, lemon juice and zest, oregano, mustard, salt, and pepper. Beat the mixture with a whisk until it becomes creamy.
- Peel, wash, and cut the potatoes into wedges. Add them to the bowl with the wet ingredients and mix well.
- Transfer the potatoes to a large baking dish or a deep tray. Add the garlic cloves with skin, thyme, and rosemary sprigs.
- Make incisions on the chicken’s skin and fill them with salt and pepper using your fingers.
- Place the chicken on top of the potato layer. Pour the mixture used for the potatoes over the chicken.
- Finally, add the water to the baking dish or tray.
- Cover the dish with a lid or, if using a tray, cover it with parchment paper and aluminum foil, sealing it around the tray.
- Bake for 1 hour at 200°C (400°F). Then, remove the lid or covering, reduce the oven temperature to 180°C (350°F), and continue baking for about 1 hour, or until the chicken is cooked, the skin is golden brown, and the potatoes are tender and have absorbed all the juices.
