Low-Carb Strawberry Cake (Erdbeerkuchen)
A healthy and delicious low-carb strawberry cake perfect for any occasion, made with a coconut and almond flour base. It’s sugar-free, gluten-free, and packed with flavor. Ingredients:
- 10g + 40g coconut oil (or butter), melted
- 50g shredded coconut
- 100g ground blanched almonds
- 80g almond flour
- 3 tablespoons erythritol (or sugar)
- 2 eggs (size M or L)
- 200g + approx. 400g strawberries
- 1 packet of whipped cream stabilizer (Sahnesteif)
- 250g ricotta (or cream cheese)
- 2 tablespoons erythritol (or sugar)
- 1/2 bottle of butter vanilla flavoring
Instructions:
- Preheat your oven to 175°C (350°F) with top and bottom heat. Line the bottom of a 26cm round baking pan with parchment paper and grease the sides with 10g coconut oil.
- In a mixing bowl, combine all the dry ingredients: shredded coconut, ground almonds, almond flour, and erythritol. Add the eggs and melted coconut oil. Mix with a dough hook until smooth.
- Press the dough evenly into the prepared baking pan, forming a small rim around the edges. Use a fork to poke holes in the dough. Bake for 20 minutes on the second shelf from the bottom. Remove from the oven, let cool, and carefully release the cake from the pan.
- Wash the strawberries, pat them dry, and remove the stems. Puree 200g of the strawberries with the packet of whipped cream stabilizer and chill in the fridge until needed. Slice the remaining strawberries thinly.
- In a separate bowl, whip the ricotta (or cream cheese) with erythritol and butter vanilla flavoring for 2-3 minutes until smooth.
- Spread the whipped ricotta mixture over the cooled cake base. Evenly distribute the sliced strawberries on top, then pour the strawberry puree over the berries.
- For extra decoration, you can sprinkle chopped pistachios or hazelnuts on top before serving.
